Happy St Patrick's day!

Starting out the festivities right with corned beef and cabbage soup!

3 green onions
2-3 cloves garlic minced
2-3 carrots chopped
1 red pepper chopped
1/4 lb thick sliced corned beef thinly chopped
1/2 head cabbage sliced thinly
2 potatoes chopped
6 cups water
Pepper to taste

Methods to the madness
1. Soften up the green onions and garlic in 1 tbl olive oil on medium heat
2. Add carrots and red peppers and soften for a couple more minutes.
3. Add the remaining ingredients. Bring to. A boil and then simmer for an hour plus.

I made this three very figure friendly and extremely hearty servings. I think if you upped the amount of corned beef it would be tastier and you could make it four with little concern for hunger or your waistline.
